Good coffee and good vibes are brewing in Buda.

Doxa Coffee Roasters will celebrate the grand opening of its Buda food truck location on May 3 at the Memorial Miniature Golf and Museum. The event will feature local vendors, raffles, music and family-friendly activities.

The overview

Although the Buda location has been operating since Aug. 31, this event will mark the company’s official grand opening, according to previous reporting by Community Impact.

The truck offers a variety of hot and iced coffees and teas, along with pastries such as kolaches and cinnamon rolls. According to marketing manager Aubryn Cuellar, Doxa roasts its own coffee and trains staff through a specialty coffee lens to ensure high-quality service. The team also makes pastries in-house.


“We wanted to create it with excellence so that people know that they matter,” Cuellar said.

The background

Doxa Coffee Roasters was founded in 2022 by Nick Shock and JT Sivils, who bonded over their shared love for coffee and community. The business launched its first trailer in South Austin in 2023 with the goal of bringing coffee to areas that aren’t already saturated with coffee options. Though they started in South Austin, both founders are from Buda and hoped to eventually bring a trailer to their hometown.

“Buda just seemed like the perfect place to move to,” Cuellar said. “[We’re going to] put ourselves out there, let people know that we're here for them, serve them coffee, give them quality baked goods and, you know, support everybody and love everybody well.”
